Mr. P and I went to our club's Big Brew yesterday, but didn't have time to brew there. You are definitely on my list of daily reading. Not only are you Catholic, science-based, and fellow homebrewers, but I love baking and two months ago I fell in love with the "Little House on the Prairie" tv show on TVLand. scary.

BTW, if you want a good tip to cut down the ferment time on a mead, add 1/3 of a pkg (8 g total) of Fermaid K to the mead each of the first 3 days of fermentation. Did it to our last batch and it was done and clarified in 3 months instead of 12. (I also find 15 lbs honey per 5 gallons and White Labs Sweet Mead Yeast gives the best results. Of course, I like my meads sweet.)

I may have to do a mead sometime... possibly when the local wild blackberries are ripe. I had a blackberry mead recently, and it was excellent, albeit a commercial offering.
